Minneapolis coffee roaster to open new café in Rochester
Minneapolis-based Spyhouse Coffee Roasters has announced plans to open a new café along Second Street Southwest in Rochester.
The new location — set to open in December — will be the seventh for Spyhouse and the first outside of the Twin Cities.
“We are thrilled to be expanding Spyhouse into Rochester later this year,” market president Kevin Wencel said in the announcement. “Rochester is a thriving city, and we look forward to introducing our specialty coffee to the area. We hope to serve as a welcoming gathering point for coffee lovers in the local community and all the diverse travelers passing through.”
The new Spyhouse is being built inside the recently-opened TownePlace Suites, located blocks from both St. Marys Hospital and downtown Rochester. The plan is to have the café open seven days a week.
Spyhouse opened its first location 22 years ago, and now has five cafés and a roasting facility in Minneapolis as well as one café in St. Paul.
In 2021, Spyhouse was acquired by Kansas City, Mo.-based FairWave Coffee Collective, though it continues to maintain its brand and operations.
On its website, Spyhouse highlights its commitment toward sustainable practices, local partnerships, and providing staff a “living wage.”
